Greedy Gourmet recipe of the week #2 – Goat’s Cheese, Sundried Tomato and Walnut Panino. The original recipe used a standard loaf but I thought I’d try out the new panino grill from my Grandma with some Ciabatta. I thought just Goat’s Cheese by itself would be too salty so I added in a whole bunch of spinach to try and balance it out a bit.
Since sundried tomatoes are dry, I soaked them in water for a while and used some of the infused liquid to moisten the paste.
